  • 1/2 cup Fresh Mint Leaves
  • 4-5 Garlic Cloves
  • 2 tbsp Shallot Optional, but recommended for a little extra depth
  • 1 tsp Freshly Ground Whole Black Peppercorns
  • 1 tsp Salt
  • 2/3 cup Extra Virgin Olive Oil

  • Spiralize the Zucchini: Start by spiralizing your zucchinis using the ribbon cutting setting. The longer the ribbons, the better—they’ll look even more dramatic and feel like a fancy dish you’d find in a top-tier restaurant. Set your zucchini ribbons aside in a large bowl.
  • Make the Dressing: In a blender, combine your mint leaves, lemon juice, garlic, shallots (if using), black peppercorns, salt, and extra virgin olive oil. Blend everything on high until the mixture is smooth and well combined. You want it silky and perfectly emulsified.
  • Dress and Toss: Pour the dressing over the zucchini ribbons and gently toss to coat everything evenly. You’ll want to do this right before serving because the zucchini has a lot of water content, and you don’t want to lose the magic of that creamy, flavorful dressing.
